It usually takes me at least that long to prep the veg

I don’t know how they calculate the times. Must be professional chefs with all the mise en place done for them and all the ovens/stoves/boiling water already ready. Like on Chopped, lol.

You get better as you learn, for sure.
They aren’t perfect, but after a year or so I’m pretty close to those times on a regular basis. Unless it’s something I’m doing for the first time, or like to do my own way.
For example, the hot honey pizzas says to preheat the oven, while you prep the toppings and let the dough rest for a total of 35 minutes. I never start my oven until the final 15 minutes of the dough resting, and then bake the dough for 5 minutes before I put toppings on (highly recommended) and put it back in the oven.
So, my own prep/cooking time is planned out a lot differently than suggested, and it helps me move through that recipe quicker.

Prep time is how long it takes to get the bag out of the refrigerator and empty the contents… 🤣

If I have a perfect run (ingredients are good, no dishes to do because I forgot to wash my nice knife, I’ve cooked it before, I remember to preheat the oven while prepping veg) then those are about right. If I popped an edible, add 30-50% lol

When step One is actually three or four steps, and it takes at least 10 minutes for the oven to preheat, and then it takes time to put everything together and then cook it, yeah, it never gets done in the time they say

I’ve done around 150 boxes and can usually do half of my meals faster than they have listed. A lot of time the order of steps isn’t optimal and you can prepare and prep veggies while meat and other veggies are cooking.

It’s all about multi-tasking. Cut your veg while the pan is preheating, prepare other things while it’s cooking in the pan etc. I usually hit at or under.

My general formula is to double the time stated on any recipe, then multiply by how many kids you have 🙃 I’m also slow and distractable so I’m never quick about it.
