Help! Threw this steak in the sous vide and got drunk. Forgot what temp I set it to but would like to recreate this tomorrow. Any ideas?

    What cut is it? The whole one looks like a filet but the pieces do not unless you sliced it with a rusty spoon

    Looks like a 50 degree Celsius steak to me. 90 minutes at that temperature will get you close to that.

    That’s rare at 125 degrees. Med rare is 129 on my sous vide.
