other tomato toast iterations I love are heavily buttered sourdough with salted heirlooms, and sourdough with red pesto, fried egg and salted heirlooms.

One thing I will always make with heirloom tomatoes is tomato toast. It’s a classic for a reason. Basically, just toast some sourdough. And while that toast, salt the tomatoes to drain out any excess water. Plus, getting rid of the water concentrates the flavor and makes the heirlooms taste even more tomatoey. Then, slather the sourdough with some ricotta. Top with the tomatoes and a generous drizzle of balsamic.

  2. I usually put goat cheese on my tomato toast, legit delicious 😩 Or a mix of mustard/ lil bit of mayo too makes it have extra flavor, yum
