To understand the origins of the mythical Pied de Cochon, we need to go back to the days of Les Halles, once known as “the belly of Paris”. In 1946, Clément Blanc (former meat agent at Les Halles) bought a small bistro abandoned since the war, at 6 rue Coquillère. In 1947, the famous restaurant was officially born. It soon became the haunt of the “Forts des Halles“, sturdy handlers responsible for moving tons of merchandise into the heart of the old Paris pavilions. The crazy gamble of 24/7 service and a forgotten dish
Although the restaurant initially catered for a working-class clientele, Clément Blanc had an innovative idea: to offer round-the-clock service. Legend even has it that his kitchens have hardly ever been turned off. A record of over 70 years of virtually uninterrupted operation. Au Pied de Cochon thus became one of the first Parisian restaurants open 24/7. A visionary, the founder of Le Pied de Cochon decided to give pride of place to a cut of meat then shunned by butchers. Stuffed or breaded pig’s trotters, the eponymous and emblematic speciality of the house, whose recipe has remained unchanged since the 40s. And it was a runaway success! By the 50s, the whole of Paris was flocking there, from the workers of Les Halles to celebrities like Charles Aznavour and Jean-Paul Belmondo. The institution was born.
