Spaghetti with Creamy Cajun Shrimp & Roasted Tomatoes
This dish brings together the richness of Cajun-seasoned shrimp, the sweetness of roasted cherry tomatoes, and the depth of a creamy garlic sauce—all over perfectly cooked spaghetti.

Ingredients:
– 12 oz spaghetti
– 1 lb shrimp, peeled and deveined
– 1 tbsp Cajun seasoning
– 1 tbsp olive oil
– 1 cup cherry tomatoes, halved
– 4 cloves garlic, minced
– 1 cup heavy cream
– ½ cup grated Parmesan cheese
– 1 tsp lemon zest
– ½ tsp smoked paprika
– Salt & pepper, to taste
– Fresh basil, for garnish

Instructions:
– Roast the Tomatoes – Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes until blistered and slightly caramelized.

– Cook the Spaghetti – In a large pot of salted boiling water, cook spaghetti until al dente. Drain and set aside.

– Prepare the Shrimp – Toss shrimp with Cajun seasoning and smoked paprika. Heat a large pan over medium-high heat, add a bit of olive oil, and cook shrimp – for about 2 minutes per side until golden and opaque. Set aside.

– Make the Creamy Sauce – In the same pan, add garlic and sauté for 30 seconds. Pour in heavy cream, stir in Parmesan cheese, lemon zest, and a pinch of salt & pepper. Let it simmer for 2 minutes until thickened.

– Combine Everything – Add the roasted tomatoes and shrimp to the creamy sauce. Toss in the spaghetti and coat everything in that flavorful mix.

– Garnish & Serve – Plate it up and sprinkle with fresh basil for extra vibrance.

It’s savory, creamy, and packed with Southern flair—and it’d pair beautifully with a side of crusty bread or a light arugula salad.
