4 Meals from 1 Rotisserie Chicken — Meal 4: Creamy Chicken & Wild Rice Soup
I used the chicken carcass and remaining bits of meat to make a hearty, comforting soup that feels like a reset meal. Warm, filling, and made with simple pantry staples.
What I did:
• Made a quick 30-minute stock using the carcass + water
• Pulled off the last bits of meat from the bones
• Sautéed mirepoix (carrot, celery, onion) in butter
• Added flour to make a roux
• Stirred in the stock, a splash of milk, and a box of wild rice with herbs
• Added the shredded chicken, and seasoned with salt + pepper
• Simmered for ~30 minutes until rice was cooked
• Served with toasted bread on the side

This week I’m making four different meals from a single rotisserie chicken. And for the final meal, I turned the leftover bones into a creamy chicken and wild rice soup. It’s warm, cozy, and the perfect way to stretch that last little bit of chicken into something filling. I started by making a quick 30inut stock just using the chicken carcass and water. After that simmerred, I strained the stock and pulled off the last little bits of meat from the bones. There is not a ton left, but it’s just enough for a soup like this. To build the base, I melted some butter in a pot and added a mirror. That’s just diced carrots, celery, and the leftover red onion from the previous two meals. I cooked that down until it was soft. Then, I sprinkled in some flour to make a quick r and give the soup some body. From there, I stirred in two cups of our quick stock, two cups of milk, and a box of wild rice mix that came with a seasoning packet. Once everything was combined, I added the shredded chicken, seasoned it with salt and pepper to taste, and let it all simmer for about 30 minutes until the rice was tender. Be sure to stir this occasionally so the rice doesn’t stick to the bottom. I served this with toasted bread on the side, and it was the perfect finish to this little budget friendly chicken series. I made this soup according to your directions! It came out amazing! My son requested it not to be creamy, so no milk. And I’m on a very low carb diet, so I made the rice on the side, so I could leave it out of my bowl. But I added the seasoning pack to the broth. Wow! Game changer! You are from NC, right? Or grew up here. I've been buying the rotisserie chicken meaning to make chicken and dumplings. I grew up on chicken and dumplings, born and raised on it here in North Carolina. Would that be something you would be interested in making in this series? My family started adding drained can corn to it, so it's like corn chowder meets chicken and dumplings!
