
Maybe it's my fifth churn, but it's the first one I'm happy with. It's a simple apricot sorbet. I left the skins on and simmered them for a few minutes. I blended it with a syrup and a splash of lime.
I'm always open to advice!
Syrup :
3/4 c sugar
1/4 cup dextrose
1/4 cup corn syrup
1/2 ts Xhantam Gum
1 cup water
Fruit purée :
450 g of cooked apricot
juice of half a lime
Next time I'll try half apricot half peaches !
