Beef Koftas
500g Beef Mince ( or lamb)
1 tbs Smoked Paprika
3 cloves of garlic minced
4 tsp Dried Oregano
2 tsp Mild Curry Powder
Mix all of the ingredients in a clean bowl.
Form around your skewers and set aside
Yogurt Dressing
250g Greek Yogurt
100g Mayo
2 tbsp Olive Oil
1 tsp Dijon Mustard
2 tsp smoked paprika
1 tsp Garlic Powder
Mix sauce and test for seasoning

If the sun decides to show itself again, here’s a fantastic recipe for your barbecue. If not, this can also be done on a frying pan or under your grill. Today, I’m going to show you how to make beef kofkas. Let’s get cooking. We’re going to start off with 500 g of beef mint. You can also use lamb mint more traditionally. To that, we’re going to add a tablespoon of smoked paprika, four teaspoons of dried oregano, some grated garlic, and 2 tsp of a mild curry powder. Get that all mixed in nicely and then form around your skewers. If you’re using a grill or a barbecue, you’re going to want to soak your skewers in the water to avoid them burning. Set aside till they’re ready to be cooked. Now on to our yogurt dressing. Get your yogurt, your mayonnaise. I’m using plant-based mayonnaise cuz I need to use it up. Olive oil, smoked paprika, mustard and garlic powder, salt and pepper. Give that a mix. Give it a taste for seasoning. And then get into a squeezy bottle for finishing your dish. And when it’s time to do that, we’re going to get our skewers either under the grill or you can fry them or pop them on a barbecue. But you want to make sure they’re cooked straight through to the center. I served mine with an orzo pasta salad. Finished off with or sauce and some parsley and a homemade flatbread. It was amazing.
