🥔 GNOCCHI INGREDIENTS (for 500g of potatoes):
• 500g cleaned potatoes
• 150g 00 flour
• A pinch of salt

🧀 4-CHEESE SAUCE INGREDIENTS:
• 25g butter
• ½ onion, finely chopped
• 100g diced cooked ham
• 60g gorgonzola cheese
• 200g mascarpone cheese
• 200g cooking cream
• 50ml milk
• A pinch of salt
All right, let’s make potato noky with a creamy four cheese sauce. And honestly, this is comfort food at its finest. First, I grab 500 g of potatoes. Waxy ones work best. I boil them, skins on till fork tender, still warm, I peel and mash them smooth, no lumps. Next, I scatter a pinch of salt and 150 g of 00 flour over the potato. I gently work it all together. No needing, just until it forms a soft dough. I roll little ropes and cut them into bite-sized pillows. Give them a quick roll on a fork if you like those classic ridges. Now, the sauce. In a big pan, I melt 25 g of butter and saute half a chopped onion till soft. In goes 100 g of diced cooked ham. Give it a minute to sizzle. Then I add the cheeses. 60 g of gorgenola, 200 g of mascarapone, 200 g of cream, and a splash. About 50 ml of milk. Stir. Keep it low and watch that sauce turn silky. A pinch of salt to finish. Noki cooks fast. Drop them in boiling salted water and as soon as they float, they’re ready. I scoop them straight into the sauce. Toss everything gently and just soak up that cheesy goodness. This whole plate is pure joy. Pillowy noki creamy sauce and that smoky ham. If you make it, trust me, you’ll never look at store-bought noki the same way again.
