This salad’s so good the fruit flies are coming. It’s sabuli into the kitchen and wash those vegetables like your life depends on it. Start it with the parsley. Soak it, wash it, bless it. That sand likes to hide in the crevices the way your nosy aunt hides at a family gathering. Next, green onions. Wash them like they just came back from a long night in basil. And the tomatoes. Why on earth does every single benadura have to have a sticker? Like they are literally all on the same vine. Now yoohi, grab your sharpest knife. You know the one that scares your in-laws. And start chopping the parsley. Then toss in the green onions. Time for number one, cracked wheat. It’s fine, but not as fine as you. Sprinkle in some salt and a touch of olive oil so that cracked wheat can soak up all the flavor. Like your tata soaks up the gossip. Don’t cook it. Don’t soak it. We are Lebanese, not confused. Now comes the juicy part, the tomatoes. As my mother taught me before I got married. Chop it, lock it, drop it. Let the liquids bring the wheat to life. Finish it off with enough lemon to make your lips pucker. And enough olive oil to make your ancestors proud. If you feel dramatic, as you should, add a splash of pomegranate molasses and serve in a lettuce boat. And look, this is tabula. This is tradition. This is love.
