First time attempting to smoke ribs ! Hope it goes ok…

    Oh man these are the best, take your time with them, 120c or 225 i think in freedom units. Smoke em for 2-3 hours, i like wrapping them after that personally but you can just keep smoking them till they’re done. Probably my favourite piece so far.

  2. Send it! I did st louis style ribs for the first time on the kamado a few days ago. Used a metal rib rack and loved having the extra space on the grill. One lesson I learned about this cut of meat: trim the cartilage-heavy top portion of the cut first – my wife loved the rib meat portion but digging meat out from around the cartilage was off-putting.

    I did some Saturday on my Joe at 225f. 3 hours to 175f, wrapped for 2 hours and did not check temp when unwrapping to sauce for an 1hr, final temp after an hour was about 15f off. Edible with a slight bite but not great, should have checked that final temp and tender before unwrapping, lesson learned.
