    INGREDIENTS:

    Dry:
    – 73g oats (blended into flour)
    – 30g vital wheat gluten
    – 17g vanilla vegan protein powder (Vedge vanilla ice cream flavor)
    – 1 tsp baking powder (4.8g)
    – Pinch of stevia (optional, for sweetness)

    Wet:

    – 165g frozen tofu, microwaved to soften
    – ¼ tsp apple cider vinegar or lemon juice
    – Splash of water (only if needed to blend)

    Cinnamon Sugar Coating:

    – 24g granulated sugar (about 2 tbsp)
    – 1 tsp ground cinnamon

    INSTRUCTIONS:

    – Microwave frozen tofu until soft (not frozen in the center). Measure out 165g and set aside.

    – Blend oats into a flour. In a bowl, mix oat flour, vital wheat gluten, protein powder, baking powder, and stevia (if using).

    – Blend tofu until smooth. Add vinegar or lemon juice. Use a splash of water only if needed to blend.

    – Mix tofu blend into dry ingredients to form a dough. Add water or flour to adjust consistency if needed.

    – Divide into 4 large balls (about 92g each) or 8 smaller ones.

    – In a separate bowl, mix sugar and cinnamon. Roll each ball in the coating until covered.

    – Preheat the air fryer to 350°F (175°C).

    – Air fry for 15–20 minutes until golden and slightly crispy.

    Macros (per large ball):
    – Protein: 14.5g
    – Carbs: 20g
    – Fat: 3.5g
