  7. Great cut of beef, nicely cooked . Skirt is a good example of a cut where you can see the fibres so clearly. Just put this one in the bank .

    Looks amazing. Agreed on cutting against the grain but honestly I love it this way too. I’ll take skirt steak any way it comes! It’s good in fajitas but honestly it’s become one of my favorite cuts and is good enough on its own. What was your cooking process here?

    This hurts my EVERY last sensibility! SO perfectly cooked but, yet… the cut!! UGH! I’m sure it tasted every bit as good as it looks but for love of all things holy, listen to the comments. Cut against that grain next time and it will indeed be melt in your mouth tender!
