Great cut of beef, nicely cooked . Skirt is a good example of a cut where you can see the fibres so clearly. Just put this one in the bank .

This hurts my EVERY last sensibility! SO perfectly cooked but, yet… the cut!! UGH! I’m sure it tasted every bit as good as it looks but for love of all things holy, listen to the comments. Cut against that grain next time and it will indeed be melt in your mouth tender!
