EASTON, Pa. – The owners of a much-loved dining establishment in Northampton County are bringing another tasty concept to the area.
Zaks Bistro, a new Mediterranean and American eatery from the owners of Daddy’s Place in Easton, will open Tuesday, Aug. 5, at 645 Northampton St. in Easton, co-owner Lena Koorie said.

Koorie operates the 12-year-old Daddy’s Place with her husband, Sharbel Koorie, and sister and brother-in-law, Odil and Peter Koorie, at 650 Northampton St.
The family members, who have a Lebanese background, have found much success with Daddy’s Place – a full-service establishment offering freshly prepared Mediterranean dishes such as hummus, falafel, tabouli and meat and seafood kabobs, and they are looking to further serve the community with a fast-casual lunch option.
“We are very excited to continue growing,” Odil said. “Just like at Daddy’s Place, everything will be made fresh-to-order at Zaks.”

Zaks, named after Lena and Odil’s late father, will operate across the street from Daddy’s Place in a renovated space that previously housed Zingales, a business selling fresh fruits and vegetables.
The Koories spent the past couple of years updating the 645 Northampton St. with various upgrades.
“As our customers know we’re always looking for new ways to better serve our community, and we are thrilled to share a new chapter in our journey!” a message on the Daddy’s Place Facebook page reads.
“… Starting next week Tuesday August 5th, you can enjoy our delicious, freshly made wraps, bowls, sandwiches, pizzas, smash burgers, and Mediterranean-inspired favorites every day during lunchtime. Whether you’re a college student on the go, a professional on a lunch break, or a family looking for a quick bite — Zaks has you covered.”

Zaks’ menu will feature popular selections from Daddy’s Place along with some new additions, Odil said.
Highlights will include wraps, steak sandwiches, smash burgers and pizzas.
Customers also will be able to enjoy homemade dips such as labne, baba ghannouj and various types of hummus, including pine nut, spicy and Beirut style (topped with chickpeas, parsley and sumac).
The menu also will include appetizers such as baked kibbee, fried cauliflower and grape leaves; wraps such as kafta, falafel and shawarma (beef, chicken or lamb); and salads such as fatoush, tabouli and Mediterranean (spinach or romaine lettuce, with goat cheese or feta cheese, tomatoes, red onions, garlic, fresh-squeezed orange and balsamic and olive oil dressing).
Popular pizzas and open pies from Daddy’s Place also will be available, Odil said.
Selections include garlic pizza, feta cheese pie, shawarma pizza, vegetable pizza, open meat pie (ground beef, onions, tomatoes, spices and pomegranate molasses), Daddy’s style pizza (tomatoes, basil, Daddy’s dressing and fresh mozzarella cheese) and zaatar pie (olive oil, thyme, sesame seeds and sumac).
To start, Zaks will operate 10 a.m. to 3 p.m. Tuesday through Saturday.
Breakfast and brunch service, featuring dishes such as omelets, avocado toast, Mediterranean hash browns and eggs Benedict, will be introduced in the fall, Lena said. Specialty coffee drinks also will be available.
In conjunction with Zaks’ debut, Daddy’s Place will introduce new hours next week, Odil said.
The new hours for Daddy’s Place are still being finalized and will be announced soon on the business’ social media pages, but the restaurant will likely operate for dinner Wednesday through Sunday, with lunch service also being available on Saturdays and Sundays, Odil said.

Cosmetic interior renovations are also planned for Daddy’s Place in the coming months.
Daddy’s Place, which continues to offer catering and private parties, features a full bar and beer to-go.
The business previously offered hundreds varieties of craft beer, but it recently scaled down its selection to make way for more dining tables, Odil said.
