Ingredients
– 300g minced meat
– 1 medium onion, finely chopped
– 2medium tomatoes chopped
– 1 tsp yellow curry powder
– chopped parsley / Coriander leaves
– Turmeric powder -1/2 teaspoon
-Coriandar powder -1/2 teaspoon
– Cumin powder -1/4 teaspoon
-garlic – chopped. 1 teaspoon
-chillies 2 finely chopped
– Eggs -4
olive oil -1 2 tablespoon

– Crushed red chili flakes (optional)
– Naan or flatbread for serving

Instructions
1. *Cook the lamb*: Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Cook the lamb, breaking it into small pieces, until browned (3-4 minutes).
2. *Soften the onion*: Add the chopped onion to the skillet and cook until soft (4-6 minutes).
3. *Add spices and tomatoes*: Stir in the curry powder, chopped tomatoes, salt, and pepper. Cook until the tomatoes break down (3-4 minutes).
4. *Add eggs*: Cover and cook for 2-3 minutes / until the egg whites are set and yolks are still runny
5. *Serve*: Garnish with parsley, chili flakes, and serve with naan or flatbread.
