Looks good. I prefer mine with a little bite. I don’t like fall off the bone because a lot of time, that means the meat is overcooked.

I have done two sessions with 2x racks of ribs on a smoker my wife bought for me for Xmas a year or two ago. I use the 321 method. Obviously whenever I do the family is invited to partake etc. They are delightful but I’m a tear that meat kind of guy. But apparently from now on my ribs need to fall off the bone aka over cooked to shit, 200+ degree internal temp.
Then again my wife likes jerky that’s soft, I like old school jerky where it’s dry ass meat gum. In a change of things my wife is very particular her steak is medium rare which I enjoy as well, but if something goes wrong and it’s well done, send it my way I’m with it.
