Gwinnett County Schools will debut several new lunch menu items this fall, including a student-led creation from Berkmar High School’s culinary arts program.
You know what else is great about attending school, Cheryl is lunchtime. That was my favorite part of the day. Gwinnett County schools, they are cooking up something special for their lunch menus this fall. We’re not talking about tater tots. No, no tater tots here. There are several new items on the menu, including one that’s inspired by students at Brookmore High School in Liburn. Lis Grace King shows us what’s cooking. In Preston Gougge’s culinary classroom. The heat is on. Students aren’t just following recipes, they’re learning to craft their own. It teaches you how to bring in some more local, you know, produce that’s good and nutritious and how to tie that in and make a really good meal. — And

— Working with the chef here at Burkmar, you know, it was great to see what they had developed um because we know it was student led. School nutrition director Karen Halford is excited to unveil the chicken churrasco bowl. Menu item this October. The rice pull off base will be topped with grilled chicken, a homemade chimichurri sauce, green onion garnish, and a slice of lime. They knew it was gonna fit with our strict nutrition guidelines, um, so it was really plug and play for us. Getting students excited about eating healthy requires the right recipe. They would taste it and be like, Oh, I think this needs a little bit more acid or this needs a little bit more salt, so it was really cool talking through that with them and. Just seeing what they had to say about it. Chef Gau remembers those same conversations as a Gwinnett culinary student himself. It’s really wild. Now his students’ recipes will feed thousands in the districts where his journey began. I honestly didn’t see myself being a teacher, but now that I’m here in this position, I really haven’t thought about looking back. I’m ready to keep it going, keep moving forward. In Gwinnett County, Grace came a live news. And that bowl is not $10 without the guacamole. I love that full sprinkle some back. Yes, bring us some back and getting the kids involved. We love it. So Gwinnett County offers culinary arts education at several of its high schools. Burkemar’s program will include roughly 400 students when they return to class next week.
