summer is officially here and that means this panzanella salad is going to be on repeat in my kitchen with sweet heirloom tomatoes refreshing cucumbers crunchy croutons and creamy mozzarella cheese when these sweet heirloom tomatoes are in season I am having tomato salads on repeat i wait for these tomatoes all year long we’re going to cube them into large chunks and drop them into a large mixing bowl slice up a couple Persian cucumbers if you have some garden fresh cucumbers those are the best little red onion or shallots and then we’re going to make our homemade croutons with some chabata bread cube the bread into large chunks and then place onto a baking sheet drizzle generously with olive oil add some dried herbs toss everything together and then these go off to the oven to bake until they’re golden and crispy all over to assemble the salad you want to mix everything together in a large bowl add some briney capers some creamy mozzarella cheese you can also use barata cheese for this recipe we’re going to gently chop up some fresh basil leaves i also love to add fresh oregano these fresh herbs just add so much incredible flavor then we’re going to season the salad with lots of ground black pepper a little bit of sea salt a splash of red wine vinegar and of course lots of really good quality extra virgin olive oil add those croutons on top when you’re ready to serve and toss everything together you want to dig in as soon as you mix it all together the salad should be served fresh you are going to love all these incredible flavors all summer long

    For Focaccia Croutons:
    3 cups cubed focaccia bread , about 3 thick slices
    2 tbsp olive oil
    2 tsp dried Italian herb blend, or dried parsley
    For Salad:
    2 lbs heirloom tomatoes, about 4 large tomatoes
    6 small cocktail cucumbers, sliced
    1 small red onion, sliced
    2 tbsp capers
    4 to 5 large basil leaves
    2 tbsp fresh oregano
    1 cup mozzarella cheese, mini balls, sliced, or burrata cheese
    1/4 cup olive oil
    1/4 cup red wine vinegar
    sea salt and black pepper, to taste

  3. Instead of the cheese and cucumbers I would add Daikon Radish and two Mandarin Oranges cut in slices. The Grapefruit would work with this as well.
