High-Protein Pistachio Cheesecake Recipe

Ingredients
1 cup cottage cheese
1 cup Greek yogurt
2 eggs
1 cup shelled pistachios
1/2 cup maple syrup or honey
2 tbsp cornstarch
1 tsp vanilla

Instructions
Blend ingredients in a blender until smooth.
Pour into a parchment lined 6” round baking dish.
Bake at 325F for 40-45 minutes. The edges should feel set but the centre should still have a bit of jiggle when you move the dish.
Cool in the fridge for a minimum of 8 hours. Overnight is best. Enjoy!

    I definitely overcooked mine by like 5min, but it was still so decadent.

  3. all this high protein bullshit never mentions the calories…its almost like they know it will turn off most people if they are honest about calories. So they only emphasize protein.

  4. I mean it looks tasty, and you could certainly eat some of it every day… but the calories for the whole thing are around 1600 so don’t eat it all

  6. Made this!! It came out great!! My cooking time was a tad longer than mentioned in the recipe. But this was everything you'd expect in a cheesecake – and we cut it into 8 slices, so the sugar content wasn't outrageous. Thanks for the share, Chef!!

  7. syrup and healthy? would do this with a sugar substitute or even without anything sweet at all. I also believe it is possible to replace pistachio with any other nuts like walnuts or hazelnuts
