5-ingredient Zucchini Pasta! (If you count salt, it’s technically a 6-ingredient pasta). I made this pasta for a heartbroken friend once. She said she didn’t have an appetite at first, but once she started eating, she finished the whole bowl. This pasta is that good!

Let’s make five ingredient zucchini pasta. I make this pasta every summer when zucchini is in season. Slice zucchini into half moons. You’re going to use lots of lots of sliced zucchini. So yes, lots of slicing. Seasoning is only salt and red pepper flakes. But zucchini gives so much flavors to this pasta. Some of you may already know, but I used to work at Disney World in Florida. When I was there, one of my co-workers had an Italian roommate. This recipe is from her. I don’t have the original recipe anymore and I never wrote it down. So now I just make it from my memory. I’ve been making this since then. I once made it for a friend when she had a breakup and didn’t have an appetite, but she ate the whole bowl. This pasta is that good. It’s super easy and so good and it’s plant-based. Cook down the zucchini until it basically melts away. I use ficidi because it’s great for catching sauce and the zucchini turns into this super delicious sauce.

  1. I would just cook down the zucchini to eat without the pasta. But you have never steered me wrong, I’ll try your way first.

  2. RIE!!! Hiii! I was telling my friend the other week that you, from Buzzfeed, influenced a lot of my cooking. Thank you for teaching and sharing your talents with us.

  3. I'm making this right now. Not putting garlic in this is the hardest thing I've ever done in my life. Are you sure I'm not supposed to put any garlic in this?
