Ingredients:

For the Dough:

350 grams of fine semolina
650 grams of all-purpose flour
250-gram unsalted butter with 250-gram ghee, melted and cooled
1/2 cup condensed milk
1/4 tsp salt
½ cup water
½ cup of blossom water
1 tsp mahlab (optional – traditional spice)

For the Filling:

1 lb dates paste
1 tbsp butter or ghee
1/2 tsp cinnamon (optional)
½ tsp cardamom powder
Topping:

Powdered sugar for dusting (optional)
Instructions:

Make the Dough:
Mix semolina, melted butter and ghee and soak them for one hour or overnight.
Add the flour and mahlab the Gradually add milk, water, blossom water and knead into a soft dough.
Shape it into small balls and put a side
Prepare the Filling:
In a pot, knead the date paste with the butter, cinnamon and cardamom.

Shape the Cookies:
Bake:
Preheat oven to 350°F (175°C).
Place cookies on a baking sheet lined with parchment.
Bake for 15 minutes, or until just barely golden on the bottom.
Cool & Dust:
Let cool completely.
Dust with powdered sugar if desired.
