INGREDIENTS

• 1 can butter beans, drained
• 3 white potatoes, peeled and chopped into cubes
• 1/2 bunch of chives, chopped finely
• 1/2 bunch parsley, chopped finely
• 3 tbsp sour cream
• 1 garlic clove, minced
• 1 bunch asparagus
• 4 cod fillets
• 2-3 garlic cloves
• 1/4 cup mayonnaise
• 1 lemon
• 2 large tins (700g) butter beans, rinsed and drained
• 1/4 cup grated parmesan
• olive oil
• salt and pepper
INSTRUCTIONS

1. In a suitable airfryer dish combine the butter beans, potatoes, olive oil, salt + pepper, garlic, half of the herbs and half of the sour cream. Mix all elements well and transfer to the air fry for approx. 10 minutes at 220°c.
2. Wash the asparagus and trim 4cm long pieces, discard the ends. Add asparagus, olive oil, salt + pepper, remaining herbs and parmesan, mix and set aside.
3. On a chopping board/separate bowl prepare the cod by patting it dry and coating in mayonnaise and a sprinkle of herbs.
4. Once beans and potatoes are cooked, add the asparagus mix followed by the cod to the tray. Transfer back to air fry for approx. 12 minutes at 220°c (this can depend on cod size) check at around 8 minutes if cod is cooking through nicely. Serve immediately and enjoy with a sprinkle of lemon juice.
