I really didn’t like zucchini until I was a model in Milan. Lore for another day. And this local restaurant used to make zucchini fries that instantly made me fall in love with zucchini. Years later, I used my culinary training to hack this recipe, and it’s still my favorite way to eat zucchini. So, here is how you make it. Cut the zucchini into long spears, and then we coat in an egg wash, and then a mixture of panko, breadcrumbs, and parmesan cheese. I personally use a gluten-free panko, and trust, it’s just as good. Add about an inch of oil to a wide pot. I like avocado oil, but if you want to be like the Italians, use olive oil, but you know my feelings about that. Work in batches to not overcrowd the pot and fry off at like 350 degrees for around 3 minutes until they’re golden brown and crispy. It takes me back to Italy every single time. In Italy to fry food we usually use sun flower oil or peanut oil

We have these at a restaurant called White Spot here in BC 🇨🇦 I used to work at in my early 20s. They are called "zoo sticks" and they are served with "zoo dip" which is roughly 1/3 ranch and 2/3 sour cream-give or take a bit of either to taste. They are DELICIOUS so thanks for showing this recipe
