If you have never tried spaghetti squash, I highly recommend you add this inexpensive and versatile winter squash to your meal rotation.
Even though the texture would lead you to believe it is high in fiber it is not particularly so but it does provide Vitamin A, Vitamin C, Manganese, Potassium, and B6.
A filling serving of 1-cup is only 42 calories without any added fats or sauces.
Use it to replace the pasta in chili spaghetti, add the shreds instead of rice or noodles to your favorite homemade vegetable soup, top the shreds with marinara, or simply mix in a drizzle of olive oil or grass-fed butter, topping with your choice of grated cheese.
Some seasonings to consider… Italian spices, black pepper, red pepper flakes, parsley, dill, chives, garlic or cinnamon and ginger. Try a Moroccan-inspired rendition with cumin, coriander, garlic, and cilantro.

How to cook Spaghetti Squash perfectly…
~ Preheat oven to 400°
~ Cut in half with a large chef’s knife. Be very careful, as the rounded shape can easily slide, giving an opportunity for a nasty cut. If you want to soften it a bit, try poking holes in the surface (to allow steam to escape) then microwave the whole squash for a minute or two. Allow to cool before handling, then attempt to cut in half. You can also do this in a conventional oven. Repeat the process as needed.
~ Scoop out seeds.
~ Drizzle a scant amount of EVOO on the surface of each half. Salt with a quality salt like Himalayan Pink Salt or Redmond Sea Salt
~ Place cut side down in a parchment-lined baking dish.
~ The size of the squash will determine the baking time. If it is a pound or so, begin checking for doneness (per the video) around 35 minutes. Re-check at 7-10 minute intervals. You will get a feel for how long as you gain experience. If they are 2 lbs or more, let it bake for 45-50 minutes before checking.
~ Remove from oven when tender but still slightly firm. Allow to cool before scooping out the strands.
~ Season or sauce at this stage. Serve.

hello hello hello this is Beth from cooking lessons for my daughter and if you’ve been following me for a while you may notice that my counters are a different color so it’s not that I changed my counters to Orange but that I moved and I moved into a house so I am super happy that’s also why I’ve been absent for a little while and I’m all settled in and ready to go again so um we’re making spaghetti squash it’s really a very simple thing to cook it is filling it is delicious and it is good for you so I’ve already cut it in half which can be a tough thing to do but I’ve discovered that if you throw it in your microwave yes I have a microwave in this house um so I’m not getting rid of it I’m not pro microwaves uh I used to be very anti microwaves but sometimes it’s convenient so I’m good with it live and learn right be open to change at any rate um you can microwave put a couple holes in the skin and then microwave it for a couple minutes or you can stick it in the oven for a few minutes and I’ll have the detail details in the description as always so we’re going to take the seeds out and I found that using a big spoon like this is the biggest one in the set is the most efficient way to do this so how have y’all been I’m loving life um yeah life is good and I am happy to be back to this because I love cooking it’s a passion of mine anyway the oven is heating to 400 we are going to drizzle it with just a little bit of olive oil and actually I’m going to go ahead and set it in my prepared pan and it’s prepared meaning it’s lined with parchment this pan happens to be aluminum and I don’t cook anything in it where oops that was a little too much we just want a light drizzle I’m having trouble getting the right angle because of the camera pipe okay so we’re just going to spread that around a little bit then we’re going to [Music] Salt again light you can always add more later and some pepper we’re going to flip it over use a fork inhal some copper to puncture the skin and we’re going to put this in the oven for we’re going to start at 30 minutes and we’re going to check now I used to think that it needed to be really well cooked for the strands to turn into spaghetti like uh yeah like like spaghetti but now I prefer it a little bit more a Dente so uh hang with me we’ll be back after at 30 minutes minutes 30 minutes timer off let’s check it out okay looking pretty good okay it’s it’s flaking really well so I’m waiting for it to cool a second okay um I think it needs about 10 more minutes so back in it goes okay so this was only an extra set minutes I just I cook a lot by feel and yeah I just had a feeling we were good to go so it’s at the point now oh it’s perfect just a little a Dente last time it was kind of crunchy and this still you know like a Dente pasta it just has a little bit of tooth to it still now at this point you can add whatever you want I like mine with butter and Parmesan but I’m telling you this is pretty tasty just like it is so that’s how you make spaghetti squash oh some people add cinnamon you can add spices Ginger all kinds of things I will leave some suggestions in the description and I always write out the instructions so you can just copy and paste and either print it out or save it to your computer in a file with that have a wonderful day I am I really enjoy this I have missed connecting with you all so leave comments to ask questions and share my videos please thank you have a great day
