Over the years, I’ve made all kinds of delicious recipes with my Mom’s homegrown zucchini, but nothing has stolen my heart quite like these Parmesan Crusted Zucchini Fries (aka – Lazy Fries in our house!)

They’re ready in 30, have a crispy coating, tender middle, and you can dip them in almost ANY sauce! (Although I’m pretty partial to some garlic aioli!)

It’s one of the best summer side dishes and goes great with all of your weeknight dinner faves.

These are what I like to call my lazy zucchini fries. They have the crispiest parmesan coating and are ready in just 30 minutes. You’ll start by tossing thick strips of zucchini in a bit of oil, Italian seasoning, salt, and black pepper. This little bit of oil helps a grated Parmesan stick and will give the fries that irresistibly crunchy texture. Then simply layer them onto a wire rack on a baking sheet and bake for about 15 minutes or until they turn a gorgeous golden color. Recommend the full recipe evolving table.com.
