Hi MealPrepSunday, this is a variation of one of my favorite lunch salads. I included nutrition facts as well, ingredients are by weight.
Mixed salad greens, sliced strawberries, scallions, reduced-sugar Craisins, chopped walnuts, fat-free feta cheese, homegrown broccoli sprouts, marinated and baked chicken breasts, Ken's Lite Raspberry Walnut Vinaigrette.
For the chicken marinade I used red wine vinegar, dijon mustard, a splash of the Ken's salad dressing, salt and pepper. It turned the breasts pink and my first thought was "it looks like flamingo now" 🤭 Bake breasts at 375° for 35-40 minutes or until it reaches a safe internal temperature of 165°.
Some other ingredients I've used in this salad for variety: goat cheese, pine nuts, sliced almonds, fresh raspberries, sliced mushrooms, diced apple, shrimp, fresh cilantro, homemade dressing (Balsamic vinegar, dijon mustard, olive oil, salt and pepper). Serve with a side of sliced baguette or sourdough bread, goes great with a hot cup of soup too.
