Made my own starter. This is at 2.5 weeks on the counter. Going to give it a try this weekend.

    I love that you created it all on your own. So many people seem to get so stressed out about simply leaving a flour and water mixture to ferment.

    Has it been consistently doubling (or tripling) for 3 consecutive days at least? My starter that I’m using now is exactly 1 month old and it has produced amazing bread so far
