    I’m a fan of fall off. I don’t care what others say, or bbq competitions. I like mine to fall off even more than yours.

    Preference dawg. Did you like them? That’s all that matters.

    My preference is ribs. Anything better than half decent is still ribs.

    I like them either way on or off the bone, but that looks really dry.

    Me personally, that’s just a TOUCH over, but the fact that you can hold it by the bone is a good indicator that it isn’t overcooked. I just like to pretend my only option to get the meat off the bone is my teeth.

    I don’t mind either way. Clean bite or fall off the bone.

    Those do look very dry, but I know sometimes video/pics can look that way.

    As long as you enjoyed them, you’re good.

    When they judge them for competition if it does this it is considered overcooked. When you take a bite, it should leave a bite impression.

    I would add, if it tastes good and you like it who cares what the internet thinks.

    I’d still eat and enjoy them finely..but all meat the more you cook it the less of the natural flavour you get

    Overdone. Make a makeshift mcrib samny with it.

IMO the best rib is at the instant that they become fall off the bone, I like being able to perfectly clean a bone without having to sit there and gnaw on the bits that stay stuck to it even if it has a better mouth feel to be a bit more firm. At the end of the day I’d take an overcooked rib over an undercooked rib.

    Technically overdone by smoke comp nerds standards, but that’s exactly how I like em lol. If the bones don’t start sliding out, they’re not ready for me

    They look a little dry, no smoke ring, I’ve seen ribs dripping that are fall off the bone but like I always say , angles make or brake certain cooks

    Ive had “fa off the bone” where you can’t even pick the rib up without the bone slipping out. That looks perfect for my taste

    I think it’s perfect! To me overdone is when you can’t even pick up the rib because the bone slides out or the meat falls apart. I think yours are perfect.

    That would be overdone in the competitive BBQ world, but you should make them however you like them best.

  20. Family prefers fall off the bone, so that’s how I make them. Not a big enough difference for me to care.

    Way overdone for any sanctioned BBQ contest, but for home, just right is however you like it.

  22. I have been at this for about 2 years now. In that time I have learned a lot. The number one thing being there are no right absolute answers in this game. If that is how you like your ribs that is completely fine. Your doing great!
