Would you try strawberry ricotta bruschetta?
A delicious twist on a classic
1 cup diced strawberries
1 tablespoon fresh chopped basil
1 tablespoon fresh chopped mint
1 tablespoon balsamic vinegar
1/8 teaspoon salt
1/4 cup ricotta
1 tablespoon Olive oil
1 French baguette cut into slices
Brush sliced bread with olive oil on both sides. Place on sheet pan and bake at 350° for 5-7 minutes until toasted flipping half way. In a bowl combine diced strawberries basil and mint. Once bread is toasted spread ricotta cheese on top. Spoon strawberry mixture on top of ricotta and sprinkle a pinch of salt on each piece. Drizzle balsamic vinegar on top and serve.

This is not your average bruschetta. This is my strawberry ricotta bruschetta and it is amazing. Start by slicing up a baguette, brushing both sides with olive oil and pop them in the oven until toasted. Dice up some fresh strawberries. Add them to a bowl with some fresh chopped basil and some fresh chopped mint. Give this a good mix and set it aside. Once the baguette’s toasted, spread some ricotta cheese on each slice and top this with the strawberry mixture. Next, you’re going to add a pinch of salt on top of each one and a drizzle of balsamic vinegar. Then it is ready to be devoured.
