[homemade] Berry Tart with Crème Pâtissière

    *Pastry*

    * 50 g sugar
    * 25 g almond flour
    * 1 g salt

    Mix and sift together.

    * 75 g unsalted butter
    Rub the butter into part of the dry mixture.

    * 1 egg
    Lightly beat the egg and gradually add it to the butter mixture, mixing well.

    * 125 g flour
    Sift into the butter-egg mixture.
    Mix until combined.

    Wrap the dough in cling film and refrigerate for 8 hours.

    Grease a 20 cm tart tin with butter and place it in the fridge for 1 hour.

    Roll out the dough (without letting it warm up) to 3 mm thickness.
    Line the tart tin, cover with parchment paper and fill with baking weights.

    Bake at 160°C (320°F) for 40 minutes.

    Remove weights and parchment.

    Brush with beaten egg.

    Bake at 140°C (285°F) for 5 minutes.
