GOLDEN VALLEY, Minn. — Kowalski’s Culinary and Branding Director Rachael Perron joined KARE 11 Saturday this week to share tips for making delicious iced tea and coffee, and the benefits they can provide for healthy skin.

The polyphenols (plant compounds) found in green and black tea leaves can combat inflammation, both from the sun and day-to-day inflammation that otherwise occurs in the body.Also, in animal studies, caffeine has helped reduce the development of basal cell carcinoma.Brew with great tasting water! The minerals in well water are sometimes very nice for adding complexity and flavor. You can also use filtered water or bottled water. Bottled spring water offers the best natural flavor as opposed to highly filtered water that has minerals added back to it.You can make cold brew tea using cold water and patience! It takes 12-24 hours, but it’s a gentle brew that is particularly smooth. Cold brewing is really great for green teas, which are sensitive to boiling hot water. Black tea can handle more heat and a longer brew time than green tea.Add flavor with fresh lemon or lime juice (more vitamin c!), grenadine or even lime simple syrup. (Simple syrup is great because it’s hard to get granulated sugar to dissolve in cold liquid.)

Iced or cold brew coffees 

The antioxidants in coffee may also protect cells from the damage caused by the sun.Cold brew coffee means that the coffee is never exposed to heat during the brewing process. It’s made like cold brew tea, in a 1:4 coffee-to-water ratio, and is best when made with less acidic medium to medium-dark roast coffee.Iced coffee is brewed using hot water like regular coffee, which may extract more flavor from the grounds. It may be held until cool, poured or even brewed directly over ice. Because the ice dilutes the brew, iced coffee is often brewed double-strength.


RECIPE

COLD BREW COFFEE
MAKES 4 CUPS

1 cup cold brew ground coffee
4 cups water, at room temperature
Ice

Place coffee grounds in the bottom of a 2 qt. glass pitcher; add water.Stir coffee and water until all grounds are fully wet. Let stand, covered, for 12-24 hrs.Using a very fine mesh strainer, strain all coffee into a second glass pitcher or coffee pot.Serve cold coffee in mugs over ice or refrigerate, covered, for up to 7 days.
