Hey all. So my family is coming to visit this weekend and my nephew only eats white pizza with pepperoni. Do you guys have a recommendation of some sauce from the grocery store (or youtube recipe) that you've tested and you like (I'm thinking garlic/olive oil based)? I typically test everything pretty thoroughly before I make it for other people, but I don't have time now. I'm making the pies tomorrow.

White pizza is simply cheese. No sauce. Ofc the one exception is béchamel
I’ve used alfredo with pretty good results, you just gotta keep it pretty light on the alfredo.

Depends on the shop, but it’s pretty much one of the options the others have mentioned. Either no sauce, oil and garlic, a bechamel, or an alfredo sauce. Ask the parents if it usually has a sauce on it when they order. If it does, a bechamel is damn easy. I add a little garlic and nutmeg for my pizza white sauce.
My special blend is 2 parts ranch dressing, 2 parts cream cheese, 1 part olive oil, with a pinch of salt, sugar, and msg. Great on its own, but you can also throw in any extras you like: sriracha, BBQ sauce, fresh dill, black garlic, etc.
Heavy cream is a good white sauce base that can go with anything. I put it down for my Mediterranean pizza with garlic and oregano. You can add olive oil too. Just like with any sauce though, start with less than you think you need.
No clue on the sauce, but that first pizza looks top tier.
For a picky eater I would go with a little olive oil on the base with some salt and pepper (maybe some parmesan) and then just top normally with cheese and pepperoni. Garlic could be hit or miss depending on how picky they are. I would leave it off.
I do t use any sauce on white pizza. Stretch the dough, add a little olive oil, fresh garlic and mozzarella, Pecorino Romano, and ricotta. In this case add the pepperoni and launch.
Unless the kid is autistic or something, just serve the pizza normally the way you like to make it. Kids gotta be challenged alevery inch of the way growing up.
Traditionally, a “white pizza” does NOT have a white sauce, it’s just a layer of mozzarella and then proceed with your pepperoni and Parmesan.
You do not want to put a white sauce on a pizza
A little garlic olive oil on the dough is a nice touch before adding cheese. Bechamel or anything with roux/flour in the sauce gets too stiff once it cools, imo.
I got you! Add garlic, herbs, salt, and pepper to heavy cream. Ideally use an immersion blender to churn the heavy cream until it gets just thick enough to be spreadable. It’s incredibly easy to work with and prevents you for pouring soupy cream on the pie.

No one likes red sauce but me in my house… I go between pesto and garlic infused olive oil… u can add whatever else too.

I usually wouldn’t add a sauce but I’ve heard of people using Alfredo sauce before, the kind in a jar. I’ve also used a layer of mascarpone kind of like a sauce, although it’s difficult to get it to spread very well, and I’ve used a bechamel sauce before although I didn’t think it added much personally. I’ve also used garlic butter although I don’t really think most pizzas need extra fat like that. I’ve also heard of people using pestos or barbecue sauces although I haven’t done so.

I love white pie (what we call white pizza) but pepperoni would generally not be a topping on a white pie. The “sauce” would be olive oil + garlic and the toppings would be pizza cheese, plus some ricotta and maybe some spinach. I’m sure pepperoni would work but it’s just not an expected topping.
The photos I’m seeing do not look like white pies.
Just do garlic and EVOO it’s awesome.

I did this pizza without a white base (just olive oil and some pecorino) and with a ricotta base (ricotta and garlic and a bit of salt).
The ricotta base is nice and it gives a cream to the pizza, obviously with the pesto and the burrata it’s even creamier but i liked the ricotta base better than without

White sauce recipe:
6 cloves garlic (minced)
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp oregano
A pinch of red pepper flakes
2 TBSP Olive oil
1 TBSP flour
1 1/2 cup whole milk
20 g Parmigiano Reggiano
20 g Pecorino Romano
Cook spices and garlic in the olive oil in a pan on medium heat and when the garlic starts to turn golden, add the flour and milk and continue to cook until sauce is thick. Once sauce is thick enough allow it to cool slightly before adding parmigiano and pecorino.
I use about 6-7 oz of this sauce for a 16″ pizza and freeze the rest into ice cubes for future pizzas
Half a stick of butter melted down in a pan
However much garlic you like sautéed in the butter until it’s brownish
1 pint of heavy whipping cream whisked in
Reduce for a while until it thickens
1 cup grated parmesan whisked in
Stir until it’s the consistency you like
Salt and pepper to taste
If you want to really nail it for him, I’d recommend clarifying with his parents what “white pizza” means in this context. It’s likely that there’s a go-to pizza from a pizza place (or a frozen pizza) that he’s expecting when he wants “white pizza”.
He may be used to/expecting anything from a simple olive oil drizzle to a heavy ranch-based garlic sauce, etc. I’d try to narrow down what he’s looking for and go from there.
Nothing from the Grocery store? Make the sauce, Butter flour hot milk , cream or 1/2-1/2 parm .
Do the olive oil and garlic, if you have to have a “white sauce” buy some Carbone Alfredo sauce.

If you’d like a white sauce on your pizza, two options I could suggest… One is “country gravy” mix that you can get at the grocery store (maybe only in the US). It’s usually got a good flavour that most people enjoy, and is easy and cheap (McCormick has one, and they’re in most grocery stores).
Another option (although I’m not sure if they’d accommodate you), is that you could ask at a Domino’s if you can buy a ‘side’ of their Garlic Parmesan sauce. I’m no major fan of chain pizza, but that sauce is legitimately good (to me… I like it with grilled chicken, bacon, and onions!).
