It was always a comfort food for me when my mom would make it. My 4 year old has already eaten two servings.

Deviating from my mother’s cooking I added mushrooms and steamed in the potatoes with a mix of a bit of marmite and vegetable bouillon. Seasoned with garlic, salt, pepper, cayenne.

The protein is Impossible protein. My daughter doesn’t know it isn’t animal protein.

    I forgot to add I diced a whole sweet onion into it as well. Everything cooked in olive oil.

    Looks so damn comforting!! My mom made a hash like this when i was growing up (i loved it with a silly amount of ketchup). Need to revisit this. Well done on your first meal and enjoy your journey! 🌱

    Looks delicious! If you want more protein I recommend crumbling some extra firm tofu while you are frying everything, and add a good pinch of black salt. Gives a good eggy flavor and solid protein to the dish🌿

    Looks great! Another thing you could try is textured vegetable protein (textured soy protein) instead of Impossible. You buy it dehydrated and soak it in some liquid (like beef flavoured stock, for example) to puff it back up. Looks like mince. My whole family dont know this is how I make our famous chilli.
