I love cooking with ingredients while they’re in season. In this eggplant parmesan is just that. You’re going to slice up eggplant coated in flour, eggs, and Italian breadcrumbs. Bake until it’s golden brown. And in a deep baking dish, you’re going to place marinara, eggplant, fresh mozzarella, some more marinara, and repeat this process until you run out of the slices. On top, you’re going to top it off with mozzarella, marinara, and some parmesan. Bake until it’s golden. It comes out so cheesy, so yummy. We’re obsessed.
