Make Restaurant-Quality Scallop Risotto at Home – So Easy & Delicious!

Ingredients:
Shallot (3)
Cooking oil (1/4 cup)
Butter (12g)
Mushroom
Dried mushroom
Scallop
Short-grain rice (1 cup)
Chicken stock (4-5 cups)
Dried white wine (1/2 cup)
Salt & pepper
Parmesan cheese

Instructions:
Dice up the shallots
Slice the mushroom, and add hot water to rehydrate the dried mushrooms
Heat up a pot on medium heat, add in the cooking oil and the butter
Add in the shallots, cook for 3 minutes
Add in the mushroom and the dried mushroom
Stir and cook for 2-3 minutes
Add in the white wine and bring it to a boil
Season with salt and pepper
Start add in the chicken stock, 1 cup at a time
Add in the chicken stock and stir and cook for 1-2 minutes, then add in another cup, repeat this process for 3-4 times.
Cover with lid and cook for 10-15 minutes
Top it off with some parmesan cheese
All done, you will fall in love with the smell of this dish
Plate it with a pan fried scallop and enjoy!

Finely dice 3 shallots Heat up a pot on medium heat Add in about 1/4 cup of cooking oil Along with 12g of butter Melt the butter Add in the diced shallots Cook for about 3 minutes Slice 5 mushrooms Add the mushrooms into the pot Continue to cook for about 2 minutes Add some dried mushroom into a bowl Cover with hot water and let it sit for 5 minutes Add the dried mushroom into the pot Stir and cook for 2 minutes Add 1/2 cup of white wine Bring it to a boil Season with black pepper, and salt (1 tbsp) Mix well Add in 1 cup of short grain rice Stir and cook for 1 minute Add in 1 cup of chicken stock Mix well Add another cup of chicken stock, repeat for 3-5 times Turn the heat to low, cover with lid and let it cook for 10-15 minutes. Until the rice is soft. Add in about 1/2 cup of parmesan cheese All done! This dish smells so delicious! Plate it with a pan fried scallop, you will fall in love with this dish!
