Here is my recipe of mac and cheese, but with great volume and low calories. 370g with 390kcals.
There is actually not much cheese, but parmesan makes a great work on the flavors, and the cauliflower gives the whole recipe more volume. The ingredients I've used are:
– 50g of pasta (raw)
– 150ml of skimmed milk
– 4g of butter
– 10g of corn starch
– 40g of chicken breast
– 6g of parmesan cheese
– 1/2 Onion, chopped
– Cooked cauliflower, shredded (the amount you prefer)
Basically:
1. Cook the pasta and leave to cool;
2. Mix the milk with the cornstarch;
3. On a pan, fry the chopped onion with the butter, until onion get smooth texture;
4. Throw the milk inside the pan with the onion;
5. Add the parmesan cheese and mix on high temperature, until the mixture starts to get a little creamy;
6. Add the pasta and the cauliflower, and turn off the heat, and wait to cool a little.
And it's ready! 1 serving weights approximately 370g, but can change depending on how much cauliflower you add. The first time I've made this, I got 450g each serving!
That's it, enjoy.
