This looks like a Central Market in Dallas, possibly South Austin or Houston. Good but there’s some eyesores.
Prime ribeyes in Pic 4 have no collar. USDA Prime Collar is stripped for the pinwheels in pic 1. Shifty move, for a price premium, IMO. There’s no way I’d buy one of those ribeyes unless they were <$10/lb. I can get better almost anywhere. The collar pinwheel is a neat idea but unfortunately it means you have to destroy the actual ribeye steak.
Dry aged ribeye collar is also stripped and the remaining coloration of the dry-aged says it was a short dry age, or over trimmed.
Solid dry aged NYS and porterhouse, but again might not be aged long enough or they’re over trimmed by the looks. Good looking prime NYS, though the steak closest to the glass is on the end of the loin (evidenced by the big chonk of fat in the center.)
Good looking tritip but why sliced and not a roast?

Inconsistent thickness across all your steak cuts. This will piss off customers as there will be inconsistent cooking times.
Silverskin not trimmed off filet steaks. This will result in the steak tensing up heavily under heat and being incredibly chewy – not what you want for the most premium cut on your display.
Presentation is lacking – not showing off the best parts of your steaks. A lot of them are hidden under others, looks inconsistent and non-uniform.
