Roasted garlic parmesan black pepper mashed potatoes… back by very popular demand. The kids had them once and now they’re obsessed. Tonight’s dinner? Corned beef (thanks to Beanie who shouted it out with zero hesitation when I asked what to make) and these potatoes and some carrots are the sides. #mashedpotatoes #garlicparm #kidapproved #comfortfood #dinnerideas #cornedbeefandpotatoes #easymeals #homemadeish #momlife #familydinner #midwestfood #roastedgarlic #simplefood #dinnerinspo

Tonight we are making roasted garlic, parmesan, black pepper potatoes, mashed potatoes. Something magical is in the air in this house and they like everything I make here. I am so lucky everything works out for me. I better knock on wood. Quarter them, boil them. While my potatoes are on boil, let’s roast some garlic. Two sheets of foil. Some amount of garlic. I usually would do a whole head. So, whatever your equivalent to a whole head of garlic is. For me, it’s that much. Some high quality olive oil drizzled on your garlic. Some salt and pepper. Wrap it up like so. I’m going to throw my little package into my air fryer on the bake setting until my potatoes are done. It has been 15 minutes. I think that my garlic is now roasted. I think because I don’t know cuz I haven’t looked. Let’s look. I can My whole house smells like roasted garlic. So, I’m really hoping it is. It’s mashable. It’s going to have to do for these purposes. The ones that were not directly touching the foil are not so caramelized, but they all are fully smooshable, which means there shouldn’t be any of that spicy raw garlic taste. The carrots are unrelated. Stop being so concerned with the carrots. My potatoes are boiled. I just dumped boiling hot water all over myself. It’s fine. Everything’s fine. I’m fine. Stick of butter. It’s a lot of potatoes. I don’t need your judgment. Roasted garlic. Salt. Cuz it’s a potato and potatoes need salt. Pepper. More than you think you need. These are parmesan garlic, black pepper. Potatoes. Fresh cracked. Please. I’m not a snob about many things, but I like me some fresh cracked black pepper in this application. Allow the potatoes to melt the butter for you. Chill out for a minute. I am going to shave parmesan right into the pot with a potato peeler. Put as much parmesan in as you feel necessary or until you get bored of shaving parmesan. It’s always on the boredom scale. And we’ve met it. Mashed my potatoes and my parmesan. And I have heavy cream in the fridge, so why not use it? I don’t remember what I bought it for, but surely I’ll remember after I use it. 1/4 cupish. Are you on team hand mash your potatoes or are you on team electric mixer? I always hand mash my potatoes. I don’t know why, but it feels like the correct way to do things. My grandma used to say it’s because I’m an old soul. I don’t think that’s true. I think it’s cuz I’m too lazy to find my hand mixer every single time I want to make potatoes, if I’m being completely honest. There you have it. Roasted garlic parmesan black pepper potatoes. And I know what you’re thinking. Is it even good? And let’s give it a taste. And you better believe I’m trying it straight from the pot like a feral animal. Oh my god, that is phenomenal. Make this But of course it’s good. I made it. Follow along for more aggressive tutorials. Dinner time, guys.

  1. As a southerner living in the Midwest, you get no judgements about your butter quantity from me. My house breathes butter. 😂

  2. You’re hilarious and the magical part is the love you share of feeding your family you pepper snob!😂 Your personality, preferences and humor keep us coming back for more!💞

  3. I like a chunky mash so it's always hand mash, I can't stand puréed mash, such an unappetising texture for potatoes imo.

  4. That hand masher is such a versatile tool. I use it to shred chicken that was cooked in the crock pot, mash eggs for egg salad, mash bananas for banana bread, and of course I use it for potatoes. Team hand mash for the same reason.

  5. I like to hand mash and then whip them really quickly for a second with electric hand mixer not a stand mixer. Also warm up the butter and cream before adding them in to prevent seizing up.

  6. I asked my Grandma one time why things mixed by hand always taste better. She said it’s because mixing by hand puts more love it in. So I have a hand mixer and a stand mixer and hardly use either. 😂😂

  7. I need to try this, but it would have to be just me on my own as just a look of mashed potatoes thrown my hubby’s way and he will be 🤮, those look soooooo good though!! Yum!!

  8. OMG! First video of you, I've watched! I'm hooked! Love the vibe and the attitude! You said out loud what my inner ADHD brain says!

  9. I really was worried about the carrots when you said that – cracking up so bad 😂. I didn’t realize how worried I was until you called me out. Thank you for that!

  10. I don’t use cold butter or dairy in mine. Think I saw that as a hint on some cooking show so I follow that rule. 😉😍

  11. You're the embodiment of a real mom. Sick of everyone's shit, tired of cooking and cleaning… Everyday! You say it like it is, and don't care if you hurt feelings… But the shit you make is better than restraunt quality.
    I'm 41 with 5 kids, I get it. 🎉🎉🎉
