Ingredients:
1 1/4 to 1 1/2 lbs skinless, boneless chicken breasts (slice thick pieces horizontally)
Salt, to taste
2 tbsp canola or olive oil
1 large onion, sliced
3 bell peppers (various colors), sliced
Marinade: 1/4 cup cilantro, 1/2 jalapeño (seeded), 1 garlic clove, 3 tbsp olive oil, 2 tbsp lime juice, 1/2 tsp salt, 1/2 tsp cumin, 1/2 tsp chili powder (or use Crockpot Star fajita seasoning pack)
Serving: Tortillas, salsa, guacamole, sour cream, shredded cheese, Mexican rice
Instructions:
Prep Chicken: Slice thick chicken breasts to 1/2–3/4-inch thickness.
Marinate: Mix marinade ingredients, coat chicken, and let sit for 30 mins–24 hrs (or use crockpot seasoning).
Sear: Heat oil in a cast iron pan, sear chicken 2-3 mins per side, then rest under foil.

Good morning. I’m Trisha Bear from the Culinary Command Post and today I’m going to show you how to make Crock-Pot chicken fajitas. We’re actually going to sear the meat and the vegetables on the stove and then we’re going to put them in the crock pot. I wanted to share with you this morning um a pro a business that I found out about at the Fair of the Heart Show in Tulsa. They’re they go there twice a year and the next one’s in November, but it’s called the Crop Star Dinner Club. And you can order these packages, different types of packages, and they’ll they’ll let you taste the food while you’re there at the show, whichever one you want to try. So, here’s a few examples of that. So, this is brown sugar and garlic pork loin. They have comfort gravy roast, which is a pot roast, creamy cajun chicken, and then homestyle chicken and noodles. Usually they charge um about $8 a pack, but all you have to do is put this in a crock pot and add either meat to it or some of them have you add cream cheese or rotel. So there’s only a couple of ingredients you have to add to this to have dinner for a couple days at least. But today we’re going to show you how to make the chicken fajita crock-pot dinner from the Crocar. And they’re always at the Affair of the Heart Show in Tulsa. So 4052032723 and that’s the Croctore Dinner Club and that’s who makes all kinds of packages. They also make soups. They make dip. There’s all kinds of different meals that they make that saves you a lot of time in the kitchen. So, um, I’m going to go over the ingredient list first. So, we have I’m going to make double the batch. So, the recipe calls for one one pack of the seasoning, but I’m going to make double the batch. Um, so we’re going to add two packs of the chicken fajita Crockstar seasoning mix. 2 8 oz boxes of cream cheese. I’m using uh the yellow and the red bell peppers that I sliced in quarter inch slices to go in the chicken fajitas. We’re going to use minced garlic, about a tablespoon, a can of the green chili, mild, um a cup of chopped onions, a cup of fresh corn. I like to boil fresh corn and then take it off the cob. That’s the way I like to eat it. And then we have some condiments over here that we’re going to add to it once it gets done in the crock pot. We’re going to cook the chicken in garlic butter on the stove. And the chicken I’m going to use today is actually precooked. So you don’t have to cook it for a couple hours. If you do it on high for this recipe, it says to do it on high for 3 or 4 hours or on low for 6 hours. But we only need to do it a couple hours because we’re using precooked chicken. So I get my chicken um mostly from Sam’s. And this is Members Mark and it’s mosquite grilled chicken fillet breast. So we’re going to chop that up into long pieces to go in our chicken fajita. And then this is also another brand that I really like. It’s called chicken breast bites. So it’s already chopped up in smaller bite-sized pieces. So, in the combination between the two, that’s going to be four pounds of chicken and we’re going to chop it up and then we’re going to sear it on the stove and then we’re going to put it in the crock pot and then also sear the vegetables. So, we’re going to sear the onions, the bell peppers, the corn’s already precooked. I’ve already boiled that and the green chili and the garlic. So, that’s what we’re going to make in just a minute over on the stove. But before I do that, what we need to do is chop up the mosquite grilled chicken breast so it’ll fit a lot better when they make their chicken fajitas. You don’t need any salt cuz usually these Crock Pot uh Crocar packages already have enough seasoning in there. So, don’t add any extra salt or seasoning until you’ve tasted those cuz usually you don’t have to add anything to it, especially salt. So, what we’re going to do is chop up our mosquite grilled chicken fillets. And this bag is about three lbs. So, we’re going to we’re going to go ahead and chop up all of it and then put probably most of that box into the crock pot. See? And they’ve already they’re already pre-cooked. They’ve already got the charred lines on them. And then we’re going to we’re going to cut them long ways against the green. And I’m going to cut them again in the middle. Now, these come frozen, but I did let them thaw out overnight in the fridge, so that way when I go to cut them, it’ll be a lot easier. Okay. And then we’re going to turn them sideways and cut them in half. That’s good to go. If you do ever get a chance to go to the fair of the hearts, they have all kinds of vendors there from jewelry to food to pet supplies, anything you can think of, military hats. My favorite places are the jewelry station and the Crocar station because you get to try all the stuff that they’re they’re selling and see if you like it or not. And you can cook this or cut this in long strips, but I’m just going to cut it in like bite-sized strips. And this is a chef knife. So whenever you do use a chef knife, you just use your thumb to hold the left side and then curl your fingers under so you don’t accidentally cut yourself. In a couple weeks, I will be going to the Oklahoma Restaurant Association Culinary Competition in Oklahoma City. This makes my sixth year of working that event. So basically we set up all the food, all the dishes, everything for the chefs and then they compete against each other. And the first year I was in college, actually the first semester, I went to that competition and competed as a assistant chef with Mark Go from the country club in Tulsa and they just drew names out of a hat and that’s how I ended up being his assistant chef for that day. Well, it just so happens that we won the first round of cooking and then we ended up winning the competition and our um dish was um octopus and I believe it was some kind of fried fish, but that’s what we end up winning the competition for. I end up winning $250 and Mark Go won $3,000 because he was the chef and I was I was just a a kid. I called myself a kid in school. So, I just had started culinary school when we won that, but they have it every year. This year it’s going to be in August, the last week in August. They’ve already got their chefs selected from all over the state. So, I’m looking forward to that cuz when I go down there, I learn different types of food I’ve never seen before. And I get to watch watch their cooking technique. It is by um invitation only. So, you can’t just go there and walk in and try all the food that all the vendors have. Um, it’s all restaurant, different types of companies that sell food. They have samples of everything. So, but if you are a chef and you’re interested in joining the competition next year, you can apply. I think they start taking applications in June for that. They also sponsor a ProStart cooking competition for high school students, which I think is really neat. Um, I believe that’s in January or February. And they, um, let the kids do a version of our culinary competition, which is great. They’re already learning how to cook right out of high school. So, that’s really great. Okay, so I’m cutting up the chicken breast, the mosquite chicken breast. And then our other chicken bites over here are already cut up. So, we’re going to sear them real fast. And we’re going to sear them in garlic butter. If you ever get to go to Walmart, really good. Chef Shammy garlic butter and it’s really good. They usually sell it in like big old gallon jugs of it. So if you get a chance to go to Okmogi Walmart, that’s where they sell that. All right, just got one more to cut on this and then we we’ll be ready to sear the chicken in the crock pot and I want to cook it in garlic butter just for a few minutes. It’s already precooked and then we’ll put it in the crock pot. Okay. And this comes in a package like this. And normally it’s a two pound package. Yep. Two pounds. See? And it’s already cut up in little bite-siz piece pieces. Just like that. Okay. So, now we’re going to take it over to the stove. I’m going take that out when I get over there. Okay. Okay. So, we’re going to heat up our pan in on medium high. booth there at the fair of the hearts. Makes it a lot easier when you go to clean your crock pot up. Okay. So, I have about two tablespoons of butter. I I use the garlic butter for flavor, but then I also use a little oil cuz gar butter in general burns. So, we’re going to heat that up and then we’re going to put our chicken in the skillet just for a few minutes. So, we’re going to put our crock pot on low and we’re going to cook it for maybe maybe two hours at the most. Okay, after I cook the the grilled chicken, I’m going to also sauté the vegetables and then add them back to the pot the crock pot. You can can just put them in there, but I want to get the flavor out of them. So, I’m going to uh I want the flavor to be taste better because they’re seared on the stove. So, that’s why I like cook them on the stove first. While the chicken’s cooking, I’m going to show you this new device that I got. It’s a lemon juicer, and it’s super easy. And when I’m going to use lemon juice for something, which we’re going to use that a little later for our Mexican rice. Um, I usually put it the lemon in the microwave for about a minute just to soften the lemon and then I cut it in half. And I’m going to show you how to juice how this juicer works. If you get a chance to buy one of those juicers, I do recommend that. It works very well. It also keeps your seeds separated from the juice. Oops. Now, I’m not going to season the chicken because we’re already have plenty of seasoning in the chicken fajita package. Just going to go ahead and cook it all. All right. So, our chicken’s cooking in the garlic butter. Okay. So, we’re going to add because I’m double in the recipe. So, we’re going to add two boxes of 8 oz cream cheese to our crock pot while the chicken’s cooking. And then two packs of the chicken fajita crocar mix, which is our seasoning. And I already um boiled four corn on the cobs yesterday. And I’m going to put that corn in here as well. And I did um boil it with butter. Okay, I’m pouring my corn. Pour in my two seasoning mix. This one’s called TexMax chicken fajitas and this is called no no tortilla chicken fajitas. They sell both of these in their exact same ingredients. Okay, I’m wait to put that in until I get the meat done. And uh you do want to leave your cream cheese out at room temperature so it’s already softened. If you don’t, that’s fine cuz it’s going to be in the crock pot an hour or two anyway. I’m going to add a little more butter just because I did use at least four to five lbs of chicken. You don’t you only need about 2 lbs for this Crocs Star recipe. All right. So, we’re going to add our cream cheese. And on this recipe, all you have to add is the two packs of cream cheese, the seasoning mix, 2 lbs of chicken, and 10 oz of Rotel or tomatoes. You can chop I use both. I use ro Rotel and chopped tomatoes, which I’m going to add. One thing I like about the Sam’s chicken, it’s very moist, so it doesn’t dry out, especially the mosquite chicken and the the other one I showed you about the chicken breast bites. Now, if you’re going to use fresh chicken that’s not precooked, then then you would follow the package recipe, which is 3 to four hours on high or low 6 hours, and it’ll feed your family for a couple nights. So, I highly recommend the Crocar packages and you can get them online. They’re I believe they’re about $8 a package and I think if you buy five, you get an extra one. That’s how it is at the show. All right. All right. All right. So, we’re going to add the chicken to our crock pot and then we’ll put the seasoning last. You do want to save a little room because we’re going to cook the vegetables and put them in in there also. So, I may not put the entire 5 lbs of chicken. I may just do three to four because I want to make sure I’ve got room for my vegetables once I get them off the skillet. All right. So, that’s 3/4 full. So, I don’t want to put any more in there. So, I’m going to put the rest of it in a container. And this Yeah. So, it looks like about 3 lbs is really all that that type of crock pot will hold. And I think that’s the bigger crop pot. So Okay. So, there’s that. So, now I’m going to add a little bit of oil. Little bit bit more garlic butter. And then I’m going to go ahead and add my vegetables. Okay. Okay. So, I’m going to put in the seasoning mix for the Croc Star. Crunch it up a little. Okay, now I’m going to cook my vegetables on the stove. So I have green chili peppers, mild. These are fire roasted. I’m going cook them on medium. Just a little bit more than that one. And then I have a cup of chopped onions that we’re going to put in there. And then I have three bell peppers. I’ve got the yellow and the red. If you can get the green too, I would put that in. Just put in about three bell peppers chopped into about quarter inch strips. And then we’re going to add about a tablespoon of garlic. This is fresh diced garlic. You can already get it diced at Walmart. No. I’m going to turn it up to medium high cuz these we want to cook until they get soft. And then we’re going to add them to the crock pot. Okay. So, we’re going to stir our seasoning in with our chicken and our cream cheese, the two boxes of cream cheese that we put in here. This is for double the recipe. And then we also put in the corn, which is about a cup of corn. You can really put any vegetables that you want in it. And what I’m going to do is I’m going to add a small can of black beans to it as well. And we’re going to turn it on low cuz we’re just going to cook it for a couple hours to kind of marinate. So, you don’t have to marinate this chicken because you’re going to do that in the crock pot. But if you did have fresh um chicken that you were going to use um on that on the recipe to this video, um I did include a marination for chicken that you can use to marinate your chicken for about 30 minutes or um an hour prior to cooking the chicken. Here’s our black beans. And this is the big can. So, I’m just going to use a small can of it. Small or small can would be half of it. So, that’s what I’m going to use. And you can go go ahead and use the juice also. Use half the juice because I don’t want I don’t want too much salt in my chicken fajitas. So, one more scoop. And since I’m going to only cook it for a couple hours, I’m going to put it on high instead of low because I’m only going to have it in here maybe one and a half to two hours at the most because the chicken’s already precooked. And I also seared it on the stove. So, you do want to cook it on high if you’re for a couple hours. Okay, while that’s cooking, I’m going to demonstrate a new device that I got that I really like. Let me get the box for that. Hang on. So, this is called a Brentwood citrus juicer. I really like the juicer because it’s very easy. So, like I was telling you earlier, um I put the lemon in the microwave for about a minute and it makes it soft. And on this juicer, one thing I really like about it, it has a little device here to keep your seeds out separated from your juice. And all you do, there’s no on button on it. So once you plug it in, you put the the lemon down on it, it’s going to come on automatically. You squeeze it, you only get part of the lemon. This uses the entire inside of this lemon. So I’m going to show you how to do it. You just hold the lemon on it for just a few seconds. See how it it used every bit of your almost every bit of your lemon on the inside instead of wasting it. So, that’s very handy. I don’t know if you can get this at Walmart, but it’s called the Brent Brentwood citrus juicer. And I think I got mine from the Texas flea market for 10 bucks. So, I don’t know how much they are, but it’s really handy. It’s worth having cuz all the juice goes in the bottom and all the seeds stay in the top. Now, up here on the top, they have a a a lot like a strainer. So, make sure that your strainer is closed so that the seeds don’t go inside your juice. And you just hold on and it kind of rotates left and then it rotates right. So it does both ways. See it used every bit of that lemon on the inside instead of wasting it. So that’ll save you money on lemons because you’re not wasting the inside of it. And you just take the strainer off and wash this part and all your juice is in the bottom. So, if you want to make lemon juice, that’s a great way to make lemon juice. And this holds about 1.2 L of lemon juice. So, anyway, I wanted to demonstrate that for you because I really like this. It comes in handy and it uses all of the the lemon, not just pieces of it. Okay. So, now we’re checking on our vegetables. Basically, you want to get them soft and then slightly brown because they’re also going in the crock pot to finish cooking. I’m going to try one piece of the chicken. It tastes really good. It’s flavored very, very well. Just don’t add any seasoning if you’re going to use the Crocar package. Very good. I’m just going to turn it up on high for just a minute. The vegetables are soft, but I want to see if they can get a browning on them. Kind of like a charred vegetable. So, we have garlic, two types of bell pepper in here, and garlic butter. Here’s the garlic butter that they get from Walmart. Can’t remember how much it is, but it’s it’s actually 4 lbs of garlic butter. So, if you get a chance to go to Okmoe Walmart, get you a 4 lbs of garlic butter because you’ll use it. So, while the vegetables are cooking, I’m just going to tell you about um VFW in Henrietta is having a vets prepet costume contest, and that’s August 30th on Main Street in Henrietta. So, you can win first, second, or third place. First place is $100, second place is 50, and third place is 25. Then also, we’re going to raffle off two other gifts. So, if you do show up and enter your pet in the contest, then registration’s from 11:30 to 12:30 and the competition is at 12:30 right outside the briefcase on Main Street in Henrietta. And we don’t need any dog fights. So, please make sure your pet is on a leash. It doesn’t have to be a dog. But it doesn’t have to be a cat. It could be a lamb. Uh whatever whatever pet you want to bring. Dress him up. You can paint him, dye his hair, colors pink, whatever you want. And all we need when you register is your name and phone number and email address. And then your pet’s name and what your pet likes to do and what kind of breed is your pet. All right. So, I got the vegetables softened. So, now we’re going to turn it off and we’re going to put those in the crock pot. And that’s about three cups of bell peppers. 2 tablespoons of garlic. And then about four tablespoons of garlic butter is what I cooked them in. Now we’re going to stir them up. Okay. Mix the vegetables up with the chicken and the black beans and the corn. And just we’re going to let it cook for about an hour and a half. And I’m going to go ahead and add a little bit of water cuz I don’t want it too dry. So, if you need you’ve got too many vegetables or whatever, you can add a little bit of water to it to make like a sauce. And that’s how you make crock-ot chicken fajitas. We’re going to check check it in about an hour and a half. Fresh. What is that? Um, that’s like a pico de gallo. Yeah. Yeah. Here’s some olives. And then here’s your avocado mixer. We have a little bit of that too here. Guacamole. It’s avocado, right? Yep. Avocado. Put a little lemon juice in it. Hope I didn’t put too much. And here’s the cheese. So, we got smoked green cheddar or smoked guda green cheddar. Green onion cheddar right on the cheese. And then till milk cheddar, which is my favorite block cheese on that. I think I made it too fat. It’s going to be hard to eat that one. That’s what That’s what you get when you’re hungry. I overfilled it. But we can do it this way. It’s good. Does it taste like a fajita? Yeah. See what it tastes like. I already taste this. Heat.
