🇯🇲 Jamaican-Style Turn Cornmeal (Polenta Style)
Turn Cornmeal, also called “tun cornmeal,” is a savory Jamaican dish made with yellow cornmeal, coconut milk, and herbs and often mixed with vegetables or saltfish. It’s traditionally served with callaloo, ackee & saltfish, or mackerel.
🔸 Ingredients:
1 cup yellow cornmeal (fine or medium)
1 cup of coconut milk
2 cups water
1 tsp salt
1/2 tsp black pepper
1/2 tsp thyme (fresh or dried)
1 stalk scallion (chopped)
1/2 small onion (chopped)
1 clove garlic (minced)
1 tbsp butter or margarine
1/2 cup mixed vegetables (optional)
1/2 cup flaked cooked saltfish or mackerel (optional)
1 Scotch bonnet pepper (whole, optional for flavor)
🔹 Instructions:
1. Prepare liquids: In a medium pot, mix coconut milk and water. Place on medium heat and bring to a gentle boil.
2. Add seasoning: Stir in salt, black pepper, thyme, chopped onion, garlic, scallion, and whole Scotch bonnet pepper (don’t burst it unless you want it very spicy).
3. Add extras (optional): If using saltfish or vegetables, add them now and let simmer for about 3-5 minutes.
4. Mix cornmeal: In a separate bowl, mix cornmeal with a little water to form a thin paste. This prevents lumps.
5. Add cornmeal to pot: Slowly pour in the cornmeal while constantly stirring with a wooden spoon to avoid lumps.
6. Cook & stir: Reduce heat to low, cover the pot, and stir every few minutes to prevent sticking. Let it cook for 20–25 minutes until thick and fully cooked.
7. Add butter: Mix in butter, stir well, and taste to adjust seasoning if needed.
8. Serve: Serve warm with callaloo, saltfish, or your favorite protein.

🇮🇹 Italian-Style Polenta (Creamy or Set)
Polenta is a Northern Italian dish made from slow-cooked cornmeal, served soft and creamy or allowed to cool and sliced.
🔸 Ingredients (Creamy Version):
1 cup yellow cornmeal (medium or coarse grind)
4 cups water (or 2 cups water + 2 cups milk or broth for richer flavor)
1 tsp salt
2 tbsp butter
1/2 cup grated Parmesan cheese (optional)
1/4 cup heavy cream or olive oil (optional for richness)
🔹 Instructions:
1. Boil liquid: Bring water (or water/milk/broth) and salt to a boil in a pot.
2. Whisk in cornmeal: Slowly pour in the cornmeal while whisking constantly to prevent lumps.
3. Reduce & simmer: Lower the heat and let simmer, stirring regularly with a wooden spoon. Cook for 30–40 minutes until it’s thick and creamy.

Welcome back to my channel, people. Or if it’s your first time joining, welcome to my channel. Yes, today we’re going to make some palenta aka ton caramel Jamaican style. So, right now we’re at the Walmart. I’m going to go and get some ingredient. [Music] [Music] I’m at the cheese fridge right now. I’m going to get a herb and spiced cheese to cheese up that palenta aka ton car meal. [Music] This is it. [Music] This one and get this one. Urban spice [Music] over here is where you get all the Caribbean stuff. Then you have these ones right here. I am going to use this caramel today. Right there. Also have different coconut milk. [Music] [Music] [Music] Also today I need two Coconut milk. [Music] Okay. [Music] Can you get that? [Music] Heat. Heat. [Music] [Music] [Music] [Music] Yeah. So, I’m going to get some of these shrimp with to go with the palenta. All right. Then I’m going to get this pack over here. We have some crab. There we go. Also, we have some lobster over here. See that? Yeah. Look at that lobster. [Music] So, here people I see some fresh ones over here. These are frozen. I’m going to get some fresh ones over here. I’m going to get um these one. These are in the cheap also. See? $7. So that’s why I got to shop around. [Music] So, I get these ones for 7 $27. Cheaper than the other ones that I was going to get. You know what people? It’s actually This one is actually cheaper. I don’t know what I was saying. So, I want to get back this one now. Yeah. Yeah. I want to get this one. But, um, the fresh one, I think this the fresh one should be better because that is frozen. All right. I’m going to get the the fresh one for you guys. All right, people. Honestly, I did not realize the price was different. I was saying it was cheaper, but it was more expensive. Yeah. You know, that’s how it goes sometimes. You see something and you like it and you’re like, “Oh, yeah. This is it.” So, the shrimp is already clean and wash. So, we’re going to season and allow to marinate. [Music] Now we’re going to add some oil to the shrimp. [Music] Going to add garlic powder. Going to add allpurpose maggi seasoning. [Music] black pepper [Music] and a little salt. Now you incorporate all these seasonings. [Music] [Music] Hey there. To this, we’re going to add some some of our chopped seasoning. hands with fresh time. [Music] Then we’re going to add our shrimp. So now here I have my refined cornmeal. I’m going to s it in case of any lumps in the cornmeal. Turn the stove to medium heat and allow the pot to get hot. Now we’re going to add our coconut oil. [Music] [Music] Also going to add fresh thyme. You allow the seasoning to cook for about 2 to 3 minutes. Then you add your coconut milk of choice. Right now I’m using grace coconut milk. At this point, want to turn your stove up a bit so we get the coconut milk boiling. [Music] As your coconut milk start to boil, stir it. You do not want this milk to boil over on the stove because you’re going to lose all that flavor. [Music] So now slowly add your cornmeal and keep whisking. It’s a process where you got to keep stirring like every 5 minutes so that the cornmeal can cook properly. [Music] In the bowl I have water. I’m going to add a little sugar for sweetness. So now to the cornmeal, we’re going to add that sugar and water that mix. You can put this in before or you can add it to the coconut milk. You can do it do this at any point in time. And now we’re going to mix this in. [Music] Add some more water. I’m going to fold this in. Now, we’re going to turn our stove up just a little bit. You don’t want to cook this on high heat cuz it’s going to get burned and you’re not going to like that flavor. [Music] [Applause] [Music] Now we’re going to add some butter. [Music] Also, we’re going to add some salt. You can add this salt before also. Then we’re going to mix. Now we’re going to come in with our cheese. You can use any cheese of your choice. [Applause] [Music] And you incorporate this cheese. [Music] [Applause] [Music] [Music] I’m going to grate some more cheese on the top and leave it. And then like 2 minutes it’s ready. [Music] Now cover. [Music] [Music] Okay. [Music] Yeah. [Music] Going [Music] to serve this with some carrot and pineapple juice. Freshly juiced. [Music] [Applause] [Music]
