Sunday dinner was a variation on my Mediterranean Salmon. I was low on tomatoes and had a bunch of bell peppers, so I added them to the tray with lemon slices, red onion, garlic, olives, capers, and herbs.
Served it with black rice and charred broccoli.
Simple, colorful, and so good.
