Bukod sa caldereta, kare kare, mechado at iba ibang lutong ulam, ang MENUDO ay isang popular at classic na putahe perfect na pang ulam para sa mga handaan, fiesta at ano pa man na okasyon sa Pilipinas.
Ang pork menudo recipe ay kombinasyon ng tomato paste, kamatis, pork liver, liver spread at mga gulay tulad ng pritong patatas, carrots, bellpepper, green peas, hotdog at tinimplahan pa ng banana ketchup at tomato sauce na Filipino style, kaya naman manamis namis ito at may konti asim na pinigaan pa ng calamansi at syempre ang mga ganitong sarsa ay pasok sa panlasang Pinoy.

Mga ingredients ng PORK MENUDO:
1.3 kg pork kasim (boneless)
2 to 3 pieces of dice tomato 1 inch cube
2 pcs of carrots 1 inch cube
2 red bell pepper
finely chop garlic & onion
tomato sauce
oyster sauce
calamansi juice
green peas
raisins
1/4 kg hotdog
3 pcs bayleaf
liver spread or pork liver
cheese
Paraan ng pagluluto
1. Sa isang bowl imarinate ang pork timplahan ng paminta, asin, calamansi at oyster sauce. Imarinate ng isang oras.
2. Iprito ang patatas, carrots at bell pepper, ibukod muna.
3. Igisa ang sibuyas at bawang, kapag lumabas na flavor isama na rin sa gisa ang tomato paste para maluto ito ng sa ganon ay hindi agad ito mapanis.
4. Ilagay na ang marinated pork sa gisa, haluin lng para manuot lahat ng flavor sa pork.
5. Lagyan na ng tubig, pwede pork sock, lagyang ng isang knorr pork cubes at 3 piraso ng laurel, lagyan ng cover at hayaan mag simmer ng 30 munites.
6. After 30 minutes ilagay na ang green peas (im using frozen pease, pwede ang nasa lata) lagyang ng takip at hayaang maluto ang green peas.
7. Kapag luto na ang pork at green peas ilagay na liver spread at pasas, haluin at timplahan ayon sa panlasa, lagyan din ng cheese hayaan mag melt at timplahan depende sa panlasa.
8. Kapag okey na ang timpla ilagay na ang mga pritong patatas, carrots at bell pepper at sa huli pigaan ulit ng konti calamansi juice.
9. Serve hot with rice.

Like many Filipino dishes, menudo has regional variations. Some provinces might add chorizo de Bilbao, while others might use liver and different type of vegetables. This dish is also sometimes reffered to as ginamay or ginagmay in the Visayas islands.
