Zucchini flowers are a summer treat that I look forward to every year! I grow zucchini more for the flowers than the zucchini 😃 Having too many flowers is a good problem but sometimes I’m feeling lazy and don’t want to fry 25 individual flowers! Fritters it is! 😂

There’s something about only being able to eat something once a year that makes it really special. Zucchini flowers are really hard to find unless you grow them yourself, which I do. And sometimes I have so many that I make fritters instead of individual fried flowers. Every part of the flour is edible, but I do like to clean it up a bit. And make sure you rinse them and look inside that flower because you might get an extra dose of protein from an ant or a bee. And I’m not interested in playing fear factor. I chopped the flowers up. I chopped some basil up. I have flour, salt, pepper, grated pecorino, an egg, and salt. Start whisking that. And you want a thicker pancake batter. So I continue to add a little bit of salt until I get the consistency I’m looking for. Then I add in my flowers and my basil. Give it a mix. And then I realized, you know what? I’m going to add in some proolone cheese. I’m using just the deli cheese. It melts really well. I’m just going to chop it up small, add it to the batter, and fold it in. In my opinion, adding cheese to anything never made it worse. Into a hot frying pan, you’re going to spoon in your little patties. You can make them as big or small as you like. Make sure they’re golden brown on both sides. And these are the most delicious summer treat. I love zucchini flowers and the cheese pull is amazing. Like and follow for more recipes.
