Not me letting the crockpot do all the work 😭🍲
– 2 boneless, skinless chicken breasts
– 1 pack smoked sausage (sliced)
– 1 cup chopped celery
– 1 cup chopped onion
– 1 cup chopped green bell pepper
– 2 tbsp minced garlic
– 1 cup tomato sauce
– Seasonings: 1 tbsp of Cajun seasoning, Creole seasoning, old bay.
– 2-3 cups water
– 1 bay leaf
– 1/2 lb shrimp (peeled & deveined)
Directions
1. Add chicken breasts and sliced sausage to the crockpot.
2. Toss in celery, onions, green pepper, and garlic.
3. Pour in tomato sauce, seasoning mix, and water.
4. Add a bay leaf and let it cook on LOW for 6–7 hours or HIGH for 3–4 hours.
5. When the chicken is tender, shred it right in the pot.
6. Add shrimp in the last 20–30 minutes so they don’t overcook.
7. Stir, taste, and serve with rice or cornbread if you like!
Hold up. You ever had gumbo that cooks while you chill? Well, let me show you something. I threw chicken breast in the crock pot, then sliced up smoked sausage and dropped that in too. Chopped some celery, onions, and green peppers. Added minced garlic, tomato sauce, and the seasonings I have listed below. Then poured in some water, tossed in a bay leaf, and let all that cook on low and slow. When everything was tender, I dropped in the shrimp at the end cuz shrimp don’t need a whole This gumbo is simple. It’s warm and it hit. That’s all I needed tonight.
