
Cauliflower Steak with Kale & Sun-Dried Tomatoes
Ingredients:
– 1 large cauliflower (sliced)
– 3 tbsp olive oil
– Salt, pepper, garlic powder, smoked paprika
– 2 cups organic kale
– 1/2 cup sun-dried tomatoes
– 2 cloves garlic (minced)
– 2-3 tbsp nutritional yeast
Instructions:
1. For the Cauliflower: Heat 2 tbsp oil in a skillet. Cook cauliflower steaks for 5-7 mins per side until golden. Season with salt, pepper, garlic powder, and smoked paprika.
For the Kale: In a separate pot, heat 1 tbsp oil. Sauté garlic for 1 min, then add kale until wilted. Mix in sun-dried tomatoes and nutritional yeast.
Serve cauliflower alongside kale. Enjoy!
