You know, some people collect postcards, but these women here, well, they serve up history by the handful in pasta form. So, a little confession. When I came to Italy, my favorite pasta plate, and it still is my favorite pasta plate, is orete konima draa. Chima draa. It’s like a herb, a lettuce. It’s grown out in the wild. I think only in the winter, but Nuni was just telling me she’s created her own sauce right here in a jar ready to go. So, you can have it all year round. You make it with chima draa, anchovies, and little peppers, pepperonchini. Chef’s kiss.

Nunzia is such a wonderful lady! When we were there she invited us in, gave us a quick class on making orecchiette and free samples. This has to be on everyone's Italian bucket list!
