Hello and welcome back to the kitchen. Today we are making one of the most vibrant, healthy, and delicious salads from the Middle East. A classic tibuli or tibuli. What you’ll need ingredients serves four to six. Half a cup fine bular wheat. Two large bunches of fresh flat leaf parsley finely chopped. About 3 to four cups chopped. Half a cup fresh mint leaves finely chopped. Three to four Roma tomatoes finely diced. Three to four green onions, scallions, thinly sliced. For the dressing, 1/3 cup extra virgin olive oil. 1/3 cup fresh lemon juice from two to three lemons. Half a teaspoon salt or to taste, 1/4 teaspoon black pepper. Ingredient note: fine bular wheat is the traditional choice. If it’s hard to find, you can substitute it with an equal amount of couscous prepared according to its package instructions and allowed to cool. Parsley and mint at pudina are widely available in markets in Japer hat. Tools: A large mixing bowl. A sharp knife and cutting board. How to make fresh tibuli step by step. Soak the bular. Place the fine bular wheat in a small bowl. Pour about one cup of boiling water over it, just enough to cover. Let it sit for about 30 to 45 minutes or until the bular is tender and has absorbed the water. Drain any excess water very thoroughly and fluff the bular with a fork. Prepare the herbs and vegetables. While the bular is soaking, it’s time to chop. This is the most important part of the recipe. Wash and thoroughly dry your parsley and mint. Finally, chop the herbs, discarding the thick stems of the parsley. Finally, dice the tomatoes, and thinly slice the green onions. Make the dressing. In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, salt, and black pepper. Combine the salad. In a large mixing bowl, combine the soaked and drained bular, the finely chopped parsley, mint, diced tomatoes, and sliced green onions. Dress and toss. Pour the lemon and olive oil dressing over the salad. Gently toss everything together until it is well combined. Rest the flavors, optional, but recommended for the best flavor. Cover the tibuli and let it sit in the refrigerator for about 30 minutes before serving. This allows all the fresh flavors to melt together beautifully. Serve. Taste the tibuli one last time and adjust the salt or lemon juice if needed. Serve it as a refreshing side dish or as a light meal with some hummus and pita bread.
