Today I’m going to be making some juicy and a little bit spicy lamb kofa served up on some warm flatbreads with a lovely drizzle of tangy creamy feta dip. In my bowl I’ve got 500 g which is a little over a pound of minced lamb. And to that I’m going to add three tablespoons of panco breadrumbs, half of a small onion that’s been finely diced, two minced cloves of garlic, one teaspoon of dried mint, two teaspoons of ground cumin, 1 teaspoon of ground coriander, and half a teaspoon each of salt and black pepper. Mix everything together to combine. And then we’re going to shape them into eight cofas. So take an eighth of the mixture and form it around a skewer to form a small sausage shape. Repeat with the rest of the mixture and then place the cofters on a grill tray with a wire rack. Brush the cofters with a tablespoon of oil and then cook under a high heat grill for 6 to 7 minutes, turning a few times during cooking until they’re well browned and cooked through. You could also cook those in a griddle pan or on the barbecue. And while they’re cooking, we’re going to make that creamy feta dip. To a small food processor, add 200 g or 7 oz of crumbled feta. 100 g or 3 12 oz of cream cheese. A small clove of minced garlic. three tablespoons of olive oil, teaspoon of lemon juice, and 3 tablebspoons of cold water. Blend it all together until smooth. You can add a little bit more water if you want a thinner consistency. Now, transfer the whipped feta to a serving dish. When the lamb coffees are cooked, remove from the grill and allow to rest for 2 to 3 minutes. I love to serve the lamb cofters on some warmed flatbreads alongside that whipped feta and topped with red onion, chopped tomatoes, parsley, chili flakes, and lemon wedges. I love to serve this up on a big platter in the middle of the table for everybody to dig in. And don’t forget to serve it up with plenty of that tangy, creamy feta dip. See you next time.

  1. In answer to your reply to someone else about your premiere and channel dropping off…

    48 hours is probabaly fine. And if I know anything about YT, I'd also recommend:

    1) Simpler less "sentence like" video titles with mostly noun keywords pertaining to the recipe + the word recipe.

    2) The cook themselves in the thumbnail, nothing too garish, just on the side with a smile maybe holding the dish (algo likes actual faces)

    3) Try to keep uploading on the exact same day within the same hour or so for a solid few months, with video length almost always the same. Like, within a minute same. The algo likes predictability and sameness sadly.

    4) Perhaps upload a full vid on a weekday and a short or two on the weekend. Trouble is, I've seen people suffer from doing both, it seems like YT wants people to do one or the other, its weird. Maybe err on the side of full videos.

    5) Consider contacting some other channels for collabs but like, less "HI GUYS!!! OMG" vibes and more natural lowkey just doing a recipe together. Maangchi is huge and very nice (though in the US), Chain Baker (although on hiatus) is very good and in the UK.

    6) Maybe consider making (fast and easy to make) Q&A videos once every 2 weeks on the same day and so forth. 10mins max, take questions from the comments. Literally just like a recipe video but you don't cook anything, set-up is the same, just stand and talk I guess haha

    7) Literally contact YT and ask whats going on. Its a long shot, but sometimes they'll look into it. The algo is an unknowable eldritch entity even to them sometimes, and it crashes otherwise successful channels out of nowhere.
