This is our spoon in Morocco. This communal oven makes a type of bread that’s a staple in Moroccan cuisine. You’ll find it everywhere, but its story begins here. How old is it? Made with just wheat flour, yeast, and salted water. It’s baked in an ancient handbuilt oven fueled by cedar wood, giving it a distinct flavor and aroma. And so I guess because some houses there is no like a big place to put an oven in. So they make the dough at home and they bring it here. Also they can bring like their tajines, their spleen. This is wild. So somebody just made that at home. They brought it here and he’s going to bake it up. And then he has some kind of internal clock so he knows how long. Yes. Take a look how steamy that is than like a gas oven, I would say. Especially in the texture. Maybe not as much in the flavor for me, but in the way that it feels.
