Guys, it’s my daughter’s birthday. I’m making mac and cheese. Let me show you how I do it. So, I’m going to start by making a r. It’s flour and butter. I’m using one stick of butter. I get it melted and I’m going to throw in two big heaping spoonfuls of flour. I’m just kind of looking for this kind of soft consistency. Just like that. We’re going to let that starch cook out of there. Go ahead and add in some heavy cream. I use cream and milk. I get a little bit of cream in there first. Mix that up a little bit. And I’m going to go ahead and add some more. We add a little bit at a time. This is going to help keep it from getting real lumpy. So, stir each time until it’s smooth. Now, I’m going to finish with a little bit of milk. This is really going to help balance it. We’re going to start adding cheese. I start with my Vita. Big old handful. That’s going to give us this nice creamy cheesy base. Once that gets melted, I’ll go ahead and start cooking our pasta. Then, we’re going to throw in some more cheese. So, I’m using this white Italian blend. It’s got mozzarella, parmesan. Go ahead and give that a nice stir. It’s all going to melt in. We’re doing this in layers. Next, I add the triple blend of cheddar. It’s got a sharp, a mild, and a white. Mix those in. I’ve got some havari. I’m going to throw those slices in there. I just break them up little bit at a time. Guys, don’t boil this either. That’s what’s going to make your mac and cheese gritty. Let’s do a little bit of seasoning. I got garlic powder, onion powder, salt, a little bit of fresh cracked pepper. Just mix that all in. We’re just about ready. Let’s go ahead and build this thing. Pasta looks good. I strained that out. We’re going to go ahead and just throw that into a big aluminum pan. Going to top that with my cheese sauce. Guys, I’m going to stir this around. Just get it mixed. Be sure everything’s really well coated. Then I’m going to take this other medium cheddar. I’m just going to sprinkle that in. We’re going to mix this just ever so slightly so there’s still some big pieces of cheese left in there. That way when we bake it and we serve it, you get that nice cheese pull. That looks perfect. Into the oven 375 for about 45 minutes, guys. That’s ready. I took it to a little birthday party. Everybody just totally enjoyed. We had a great time. The mac and cheese was a hit. We served it with some burgers and I got to tell you, the sauce was super creamy and totally flavorful. That blend of cheese was just absolutely amazing. What a treat. So good. Thanks for watching. I always shred my cheese because the preshredded gets clumpy but I notice tillamook doesn’t really have that powder coating so it looks like it works well!! I also always add velveeta to mine it keeps the sauce from splitting when reheating left overs!! Love your videos Kev!! 💜

If you've never tried it before, add some yellow mustard and worcestershire sauce. Those two make the cheese sauce pop!
